Bajoluna

Bajoluna is an experiment of an experiment. Inspired by the kitchens of Mirazur under Mauro Colagreco in Menton, France and the arcane power of the lunar cycles on the natural world, Bajoluna is an invite-only dinner series hosted every full moon.

If you're reading this, you likely know who will be cooking for you. Roman strives to present a cuisine that honors both refinement and a return to a natural state. His cooking has evolved to become more refined and all the while more elemental. Depending on the region in which the dinners take place, wild ingredients and forageables take center-stage.

Expect emotion, indulgence, and awe.

The San Gabriel and Santa Monica ranges hold colder nights, chaparral edges, pine needles. At altitude, the climate resembles true seasons.
